It's been a long time... and some delicious soup.

It has been a long time since I have posted anything. I'm going to try a lot harder to keep up but my life has been extremely chaotic lately.

Kameron deployed in January and ever since then I have been on quite the health kick. I have eaten practically no carbs, very little sugar, and absolutely no dairy and very little gluten since he left. (Honestly it is a lot easier to eat healthy when he isn't here because he does not like to eat a lot of the "weird" stuff that I eat). Being on the go so much, often it is hard to decide what to eat because I have to plan everything a week in advance. This weekend, I made some homemade white bean and ham soup (thanks to Pinterest) that is absolutely delicious and will last be the whole week! So here is the recipe! Hope some of you try it out because it is possibly the easiest thing I have ever made and so delicious.

Delicious and easy white bean and ham soup:



2 cups of great northern beans
1 ham steak, diced (about a pound)
1 small onion diced
5-6 cups of water
1/3 cup brown sugar
salt and pepper to taste

Rinse the beans in cold water and sort out any pebbles. Dice the ham steak and the onion. Put the beans, onions, and ham in the crock pot. Cover the ingredients with water, (I used 5 cups because I like my soup thicker). Turn crockpot on high for 2 hours, then turn down to low for 3-4 hours.



Add the brown sugar, salt and pepper and leave on low for another half hour. Turn off and enjoy!



I seriously love this soup and how easy it was! It is also good for you and has lots of fiber. And it cost about $5 to make! If you make it, let me know how it goes.
